'Crispy Chicken Karaage | EP 16'

'Ingredients:  *5 or 6 Chicken thighs   Marinate  *2 tbsp Galangal Ginger (shredded) *1/2 cup Sake *2 tbsp Sugar *(optional) 4 cloves garlic (diced)  Batter  *3 cups Potato Starch *Vegetable or canola oil. Enough to cover 1 inch of frying pot.  Toppings (Optional, but helps to cut through the oil) *Lime, Lemon, Kewpie Mayo, Cucumber slices, Green Onions  Instructions: 1. Debone and cut chicken thighs or chicken breast into strips or cubes.  2. Marinate chicken pieces for 20 minutes in shredded ginger, sake and sugar.  Garlic optional.  3.  Heat oil to 350F for first frying.  Fry in batches and make sure to not crowd the pan when frying.  4. Evenly coat the chicken pieces in the potato starch, then shake off the excess starch.  Fry chicken pieces until light brown or about 3 minutes.  5. Remove and place on wire rack for oil to drain. 6. Heat oil to 400F for second frying. Repeat the same steps for only fry for 1 minute or until golden brown.  7. Serve with Kewpie, green onions or Cucumber, Lemon or Lime.
